花卷馒头做法要领:

1、和面的时候,用温水化开酵母粉,1斤面粉大约3g的酵母粉,里面再加入1小勺白糖,因为白糖可以更快的促进酵母粉的发酵。再把把化开的酵母水和面盆里和面,然后再慢慢加入水和面,水不要一次性全都倒进去。我做这个花卷馍,水和面的大概比例是1:2。面团和好后,盖住让它发酵到原来的两倍大。

2、面团发好拉,可以看图片,整个和面盆里都撑满啦。开始揉面,往面里面加点小苏打进去,放小苏打蒸出来的花卷馍才又白又松软。

面团揉光后用刀切成三等份,蒸馒头的面必须得揉好,我这样反复的揉了大概有5-6次,最后用擀面杖把面团擀到薄厚均匀,然后在上面刷层油。大家也可以加些椒盐和辣椒面进去还有葱花,之前已经蒸了一锅椒盐花卷,所以今天就不加这些了

哈喽,各位亲们大家好,我是自己编辑 *** 美食,并且爱下厨房的50后老太太,风雨彩虹。面粉是我们家经常吃的食材,尤其是北方人,大部分人都喜欢吃面食。我们家也是,尤其喜欢用面粉做的糕点和各种食材,真的是上千种千样。不过,大部分家庭主妇和上班族,还是喜欢家庭版的,尤其是上班族,她们的时间特别的宝贵,时间就好比金钱,所以适合比较简单适合家庭做的。所以今天风雨彩虹就教大家做一个花卷的做法,既简单又节省时间,还美观。一次还可以多做些,放在冰箱里什么时候想吃,拿出来热一热就可以,省去了经常做的麻烦。今天就和大家分享两种花卷的做法和拧法,超级简单,就是新手一看一学就会,请看我是怎么操作的吧。

*** 材料:

面粉200克、酵母2克、食用油1毫升、盐一丢丢。

操作步骤:

1、咱们首先准备一个大碗,放入200克面粉,然后放入2克酵母。

2、首先用温水把酵母搅开,然后用温水继续和面。水温大概40度,用手一摸不烫手就可以。水太热,把酵母活性能烫死,水温不够用,酵母起不到发酵的作用。和面的时候要边倒边搅,搅成大絮状。然后下手揉成软硬适中,光滑的面团。

3、盖上锅盖或者是保鲜膜,放在比较温暖的地方。白天家里有阳台放在阳台上,也可以放在温水里,饧发至两倍大,大约一个小时。看,饧发好的面蜂窝组织非常的紧密。

4、面板上撒上干面粉,取出面放在面板上,用手揉一揉排出空气。揉成的小长形,用擀面杖擀成长方形的,大约5mm的饼。再用小刷子均匀抹上油,少撒一丢丢盐,有油有盐增加点味道。再撒上一点点干面粉防止油溢出。然后折叠一层,再对折一共三层,用手按一按。



5、今天是做两种拧法花卷,所以要切不同的刀法。之一种切一宽一窄,第二种切相同的宽窄。先做之一种,取一个宽的,上面放一个窄的,这样就能显出层次。用筷子顺着在中间压,要一压到底,把筷子抽出。两只手捏住两端稍微抻一抻,再把筷子放在下面,把两端捏在一起。再把筷子转一圈,放在面板上,用筷子在一压,然后把筷子抽出,一个好看的生坯就做好了。

6、另一种做法,把相同宽窄的两个叠放在一起,用筷子也是顺着压,一压到底,把筷子抽出。两只手捏住两端,向不同相反的方向拧。拧出纹路,两端往中间对折,捏在一起,另一种生坯也做好了。

7、做好的生坯盖上保鲜膜或者是湿布,松弛十分钟。松弛好的生坯非常的蓬松,现在可以上锅蒸。

8、发面的食物,一定要冷水上锅蒸。因为发面的食物需要受热均匀,慢慢的膨胀。锅中放上冷水,放入帘子,帘子上铺上屉布,放入做好的生坯。盖上锅盖大火烧开,上汽开锅开始计算时间15分钟。15分钟到蒸好不要直接拿出,让蒸汽再焖五分钟。防止蒸汽水滴入,使花卷表皮缩水。

9、现在可以开锅拿出来了,表皮光滑不缩水,又暄又软还层次分明,超好吃的花卷就做好了。用手一按非常的有弹性,有韧劲,掰开还非常的暄软,吃一口淡淡的咸香味。亲们喜欢我的视频,可以尝试做一下,请关注风雨彩虹家常菜。
