鸡爪的做法有很多,一提起鸡爪,很多的人都爱吃,在家呆着没事,看电视的时候吃上一些鸡爪,是一件很幸福的事,今天来分享一道营养好吃的蒜蓉虎皮鸡爪,自己做的干净卫生,重要的是比外面买的要好吃,做法简单,一起来看看吧。
1、首先准备好鸡爪、生姜、大蒜瓣、葱花、香菜等,先把买回来的鸡爪处理一下,清洗干净,再把鸡爪的指甲剪掉,装入碗中备用。
2、起锅,炒点糖色,把锅烧热后转小火,把白砂糖放下去小火慢炒,炒至白砂糖融化变色,加一点水,不停的搅拌,水开后就可以了。
3、把炒好的糖色倒入生鸡爪里,用手抓匀,鸡爪不要过水,这样容易起虎皮,上色,也好吃点。
4、另起锅倒油,油多点,油烧至五六成热把鸡爪放下去炸,开小火慢炸,炸至鸡爪上色打出。
5、准备一个盆,倒入冷水,把炸好的鸡爪打入冷水里泡,泡4个小时这样就会起虎皮了(想节约时间可以放开水里煮30分钟这样也可以起虎皮的)既好看又好吃。
6、准备一些配菜:把大蒜瓣切碎,切的越细越好,生姜也切碎,切几个小米辣椒,在切点葱花备用。
7、锅里留少许油,油烧至冒青烟把小米辣椒放下去炒,放一点自己做的辣椒酱炒香,没有辣椒酱的可以用豆瓣酱。
8、 把大蒜沫和生姜沫放下去炒香,放点盐。
9、用小勺子放三勺黄豆酱,放两勺生抽,放适量的蚝油,搅拌均匀,加一点点清水,在放一勺生粉水,在来点芝麻油,把汤汁收浓稠。
10、把炒好的汤汁淋在虎皮鸡爪上,起锅倒水,放上屉板,把鸡爪冷水下锅蒸,蒸15分钟。
11、蒸15分钟是让鸡爪更入味好吃些,朋友们看上去是不是很有食欲啊,出锅后洒上一点葱花即可,喜欢吃鸡爪按我的这个 *** 试做一下哦。

鸡爪富含胶原蛋白和钙质,多吃不但能软化血管,而且还具有美容功效。佐酒下饭都不错,还是人们追剧时喜欢吃的小零食。
先一节一节把爪子上的肉啃干净,继而吃到最中间的掌中宝,一定要一口咬,好大一块,脆脆的,满足!过瘾!欲罢不能!

食材:
鸡爪 500g
姜 2片
八角桂皮香叶 1个
食用油 适量
冰糖 10块
小米椒 适量
姜丝 适量
油酿汁 1勺
啤酒 1罐
生抽 1大勺
醋 1勺
盐 1小勺
香葱 适量
做法:
1,鸡爪去掉指甲,分成三块大小。冷水入锅,加入2片姜,1个八角桂皮香叶,水开继续煮5分钟后,捞出凉水清洗备用。
2,起一锅,加入适量食用油,再加入10块冰糖,炒至冰糖融化冒小泡,倒入鸡爪上色。
3,加入适量小米椒、适量姜丝、1勺油酿汁、1罐啤酒、1大勺生抽、1勺醋、1小勺盐,用大火收汁,最后加上适量的香葱即可。

3、下面开始介绍所需要的食材:
鸡爪、柠檬、小米辣、生姜、大蒜、小葱、洋葱、香菜、辣椒油、白醋、白糖、食盐、味精、生抽、老抽、芝麻油
4、先把鸡爪放入盆中,再把鸡爪的脚尖剪掉备用。生姜、大葱分别切片。再把鸡爪放入冷水锅中焯水,再放入姜片和大葱片、料酒去腥,大火烧开,烧开后撇去浮沫,浮沫一定要撇干净,要不然会有腥味,再盖上锅盖煮八分钟
5、煮鸡爪的同时切点小料,半个柠檬切片、小葱切葱段、香菜切段、小米辣去蒂以后切辣椒圈、洋葱切洋葱丝,一起放入盘中备用。剥好的大蒜放入拉蒜器中,拉成蒜末,蒜末放入小碗中备用
6、再来调个拌无骨鸡爪的料汁:碗中放入一勺辣椒油、适量白醋、少许食用盐、生抽、老抽、少许凉白开,最后淋入芝麻油,搅拌均匀就拌好了。鸡爪煮的时间到时,捞出放在凉白开水中,再把鸡爪挑出来用厨房纸吸干水分
7、再把鸡爪放入冰箱中冷冻一个小时,冷冻好的鸡爪吃起来更有弹性。时间到时,把鸡爪拿出来开始脱骨。先拿出一个鸡爪,用刀在鸡爪的正面轻轻地划个口子,每个鸡爪指都划倒
8、再用牙签在划口子的地方来回划几下,更容易脱骨,然后先脱去大骨头,再脱去小骨头。我们脱骨时没有带手套是为了更好的演示如何给鸡爪脱骨。鸡爪全部脱好骨以后放入一个大碗中
9、再放上准备好的蒜末、柠檬、香葱、小米辣、香菜、洋葱、调好的料汁,翻拌均匀。拌匀后放入冰箱冷藏一个小时以后再食用,这样更加入味。时间到时,把鸡爪夹到小盘中摆好就可以开吃了
