【鱼香肉丝】
1.首先我们准备一下食材,木耳提前泡发,瘦肉,青椒,胡萝卜各适量。
瘦肉先切成薄片,再改刀切成细丝,胡萝卜切成细丝放在盆里备用。
青椒去籽后,也切成细丝。泡发好的木耳洗净后,摘掉根部,切成细丝,大蒜拍扁后切成碎沫,大葱白切成碎沫备用。
2.肉丝里面,打入一个鸡蛋清,加一点老抽,加老抽是为了上一下底色,再加入料酒,食盐,用手抓匀,让肉丝充分入味,上浆的时候加一点料酒可以减少肉丝的腥味。
加入一把干淀粉,加入干淀粉吃起来口感滑嫩。抓匀后淋一点植物油放置备用。放植物油,肉丝在炸制过程中不易粘连。
3.锅内烧油,油烧至5成热,油面微微冒烟时,倒入肉丝,小火低温滑油1分钟,滑至肉丝变色,倒出控油。
4.锅内加水,水烧开后,把木耳和胡萝卜倒入焯水,30秒后倒入青椒丝,然后再焯水一分钟,断生后倒出控水。食材焯水,各种食材达到生熟一致。
5.锅内烧油,倒入葱,蒜炒出香味.加入少量的豆瓣酱,炒出红油,然后加入白糖,白糖的量要大点,再倒入白醋,快速翻炒化开调料后,加入一勺清水。
6.加入食盐,味精快速翻炒几下,化开食盐,味精后,勾入一点水淀粉,用勺子不停的搅动,汤汁变的粘稠起大泡。倒入胡萝卜、木耳、青椒和肉丝,快速的翻炒,把汤汁均匀的裹住食材,汤汁收至粘稠,即可出锅装盘。
