首先准备的材料有:卤水豆腐7两(刚好能烧一盘),全瘦牛肉末2两,蒜叶1两(切碎备用);调料:水淀粉半汤勺,郫县豆瓣酱2匙子,辣椒粉、花椒末、辣椒油各1小匙、花椒油、香油各少许。
做法:1.所有材料洗净备用,将豆腐用沸水过一下捞出。
2.热锅冷油,放入牛肉末煸炒,炒散变色后放郫县豆瓣酱继续翻炒,再加入辣椒粉炒匀。
3.待炒出红油后,再放入豆腐块,并加入100毫升左右温水,待水烧开后再继续煮一会儿。
4.然后淋上辣椒油、花椒油,文火炖煮一会儿。
5.用水淀粉勾芡,完全熟后淋上香油装盘,撒上花椒末和切碎的碎叶。
要点:用嫩豆腐口感才会比较爽口,一定要用郫县豆瓣酱,否则就缺失了本色。花椒一定要用麻椒。还等什么?赶快去尝试吧!

麻婆豆腐!用料
主材:嫩豆腐400克(切1.5cm见方的块)辅材:豆瓣辣椒酱30克(怕辣可用20克)老姜 切片5克蒜头2颗老干妈豆豉一汤匙葱头 切粒10克油50克猪肉(冷冻切块)50克干辣椒(剪成节)5克花椒2克花椒面1/4茶匙小葱花5克盐1茶匙开水1000克调味料:勾芡生粉1汤匙生抽1汤匙水1汤匙
麻婆豆腐的做法
- 准备好各种调料,辅材
2豆腐过水:
- 主锅放入开水,
- 8分钟/v/速度1,温度达到100度,放入装了豆腐的滤网,加盐,3分钟/v/速度1
- 提出滤网沥干水备用
3主锅放入猪肉,姜片,蒜头
- 10秒速度6打碎,刮刀棒刮到锅底,
- 加油,豆瓣酱,干辣椒,花椒,豆豉,葱头
- 3分钟/120/速度1爆香
4插上蝴蝶棒,放入沥干水的豆腐,调味料
3分钟/v/反转/速度1拌烧
5起锅装盘,撒上葱花,花椒面,立即享用

花椒味较重,不喜的可适当减量,
豆瓣酱可用小美版的辣椒酱或者郫县豆瓣
