1;将买好的猪肉(五花肉配三七肉)绞成肉馅儿、葱切末、姜切末。
2;起锅烧油炸花椒、炸出香味、备用。
3;把肉末姜末、放进盆中、然后放进盐、十三香、耗油、味精、鸡粉、老抽调色、料酒少许、加入炸好的花椒油、然后打入一个鸡蛋,然后搅拌均匀(一定要朝着一个方向搅拌),等开始包锅贴的时候再加入葱末。
4;面盆加面、加少许盐一个鸡蛋、然后用40度温水和面(也可以用100度热水烫面)面团揉光滑后醒发半个小时,中间多揉几次。 和面这一步可以放在调馅儿前边这样不耽误时间。
5;面和好后,馅儿中加入葱末搅拌均匀、然后把面搓成长条、揪成小剂子、擀成饺子片(注意片要大一点薄一点)然后装陷包成角角。全部包好后拿电饼铛倒油烧锅。
6;电饼铛烧热以后放入锅贴、排放整齐、然后倒入面粉和水为1:10的水。量是抹过锅贴三分之一处、然后盖盖儿大火捞五分钟、等面水烙干后、在锅贴与锅贴的缝隙之间淋入食用油,这一步是为了锅贴更好的上色。加好油再烙一到两分钟、这样洛阳锅贴就算做好了。
铲出锅贴后、然后喷上米酒汤圆或米线等等都可以、这样一顿美味一顿洛阳美食就好了。
