今天分享一个家乡羊肉汤的做法,只加盐,依旧很鲜美。不用任何添加剂提鲜,用的是传承千年的古法提鲜。
答案其实很简单,就写在中国字里面。鱼肉和羊肉都有鲜味,可是我们还知道鱼肉腥,羊肉膻。有趣的是两种味道结合在一起,会发生奇妙的变化,会有一种极致特别的鲜味。
首先介绍一下食材:羔羊腿4斤 鲫鱼一条 生姜80克 大葱1根
1 先将剁好的羔羊腿清洗干净,再放入盆中泡冷水2个小时,中途换几次水,直至泡羊肉的水变的清澈。
锅中加入大量冷水,加入生姜片30克,加入料酒30克,将羊腿放入锅中开最小火焯水,
等水慢慢沸腾,会将血水和脏东西逼出,形成泡沫。撇去泡沫,
等水沸腾后将羊肉捞出清洗干净。
2 将鲫鱼清洗干净,去除黑膜和鱼鳍,打上花刀,锅中下入植物油,将鲫鱼煎至两面金黄。
3 锅中加入植物油30克,下入生姜片20克,煸炒出香味,下入鲫鱼,再加入开水。
这次加入开水会比较多,大约是平常煮鱼汤的两倍,要没过鲫鱼3厘米。大火煮至沸腾,不盖子继续煮20分钟,煮到汤汁变成奶白色。
将羊腿肉倒入锅中,开大火继续煮10分钟,让热气挥发带走一部分羊肉的膻味。再转中火,保持汤汁沸腾,盖上盖子继续焖煮40分钟。
40分钟后,我们用漏勺捞出羊肉。将汤汁再煮10分钟,这个时候里面的鲫鱼几乎全都变成了鱼渣。取一个油漏,将汤汁和里面的鱼渣分离,滤出干净的浓汤。
4 等煮好的羊肉冷却后,我们将羊肉与羊骨分离,并将羊肉改刀成2毫米左右的薄片。
这就是切好分离后的样子。
我们将大葱斜切成片,切薄一点好入味。餐馆切段是为了好看。
5 锅中加入20克羊油,怕膻味重的加猪油或者植物油,下入生姜片和大葱片爆香。
加入羊肉汤,下切好的羊肉片,大火煮沸.。
这时候就可以加盐了,加入8克盐(大家根据自己口味调整),大火煮5分钟,
起锅前根据个人口味加入胡椒粉即可。
好了,一份原滋原味,香气四溢,还没有没有膻味的羊肉汤就完成了。秋冬吃羊肉汤有大补的功效。
补充说明一下:
传统餐馆卖羊肉汤是不加香菜和小葱的,以免掩盖住羊肉汤的香味。
想吃,单独加在自己碗中,再打入汤,喝多少加多,这样的味道才是更好。
吃羊肉的话,单独用蘸味碟。
这里介绍一个非常健康养生的味碟。一个干净碗中,放入两勺芝麻酱,加入10克香油化开,再加入半块腐乳,加入生抽5克,搅拌均匀后即可完成。这样味碟老人小孩都适合。小葱和香菜根据自己口味添加,喜欢吃辣可以加入新鲜小米椒。
羊肉不膻的秘诀
1 羊肉膻不膻,羊肉本身质量很重要,尽量要选择羔羊肉,膻味就会很轻。
2 用冷水泡出血水对去膻非常重要,不能省略,用冷水焯水的时候,也要开最小火,慢慢逼出膻味。
3 羊肉汤去腥的关键是大葱,选用新鲜优质的大葱可以完美中和膻味。

而且羊肉的价格也不贵,我这里坐标是山西运城,一斤羊肉30元1斤,羊排35元1斤。一次炖上3斤多羊排才100来块钱,一次炖上满满一大锅羊肉汤。天气冷的时候吃上一碗热气腾腾、肉香四溢的羊肉汤,满屋子漂肉香味,全身暖暖的,吃着真过瘾!
炖羊肉汤,做法非常的简单,根本不需要多余的调味料就能做出原滋原味的羊肉汤。下面来跟我看下 *** *** 吧。
1、早晨从市场上买了3斤多的羊排,总共花了120块钱,还让老板多送了我2根羊骨头。骨头让老板帮忙剁开。买回家后把这些羊排和羊骨头洗干净,把羊排再切得小一点。
把羊排切好后重新装进一个盆里面,这个时候先不要直接下锅里炖,往盆里加入凉水浸泡2个小时左右。泡出羊肉里面的血水,多做这一步,炖好的羊肉汤才不会浑浊,口感才更加的鲜美好喝。
2、羊排在水里浸泡2个小时后,把泡出羊肉的血水倒掉,再次用水清洗干净。然后才开始炖羊肉汤
我家每次炖羊肉汤,都用家里更大的一口锅。把羊排和羊肉全部放大锅里,然后往锅里加入凉水,加水一定要一次性加够,中途不能加水。这里先不要盖锅盖,开大火煮开
大火煮开后把锅里的血沫捞干净。
然后往里面加入葱段、洋葱片、拍碎的生姜,加一小把花椒,盖上锅盖转中小火炖1个半小时
3、准备一个白萝卜,切掉头部和尾部,再把萝卜切成小块备用。
炖1个半小时后,锅里的羊肉已经炖好了,把羊肉捞出来。
羊肉放凉后切成小块备用,吃的时候,单独把切好的羊肉放在碗里。
再把白萝卜块倒进去继续炖半个小时
最后往锅里加入盐调味,再炖10分钟左右关火
咱们这个羊肉汤就熬好了。碗里加入切好的羊肉,再加入白胡椒粉,加点葱花和香菜。咱们这碗热气腾腾,香气四溢的羊肉汤就做好了。
汤汁浓白,味道非常的鲜美好喝,再配上半圆饼子吃,简直是绝配。
