1、食材怎么选?

在购买肋排的时候,要先看它的颜色,肉的白色和红色搭配要均匀,肥瘦搭配也要均匀,且略带点光泽,更好是粉色的那种,不能太白或者太红,这样的排骨做出来比较鲜嫩一些。
2、排骨怎么去腥?
外酥里嫩的红烧排骨是人人所期待的。那怎么样做到外酥里嫩、鲜香味浓呢?首先要把排骨切好后洗净,洗的时候一定要用流动的冷水慢慢冲洗,这样能去除一部分血腥味。
排骨洗干净后,放入清水里浸泡20分钟左右,可加少许盐,中途再翻动几次。这时可以看到清水渐渐变浑浊,排骨里的血水被析出,排骨的颜色逐渐变白。
然后锅里放入适量的水,加入姜片和料酒,水烧开后放入排骨不盖盖煮3-5分钟,中途需翻动。这时可以看到排骨的表面和骨头里有浮沫溢出,这些浮沫也是腥源。焯过水的排骨用清水冲干净表面的浮沫,这时看起来排骨变得很干净了,就可以准备红烧了。
3、红烧到底怎么烧?
红烧排骨,留给人的之一印象就是,色泽好看。其实这道菜和其它红烧菜更大的区别,就是烧的时间比较长,这点和红烧肉有些相同,同时一定要保证出锅排骨香嫩可口才行。
而这道菜除了前期炖以外,调味才是重中之重,有的人也许会说调味无非就是那几种调料,有什么复杂的呢?大厨告诉我们,同样的调料、同样的食材,把握细节和技巧,才能做出馋掉大牙的美味~
首先,是红烧排骨的上色。一定要用冰糖炒糖色。加热锅底,倒入食用油,油热后把冰糖放入锅中,观察至冰糖融化呈焦黄色时,下香料(大葱80克、生姜10克、大料2个、红枣2枚)。注意在炒制过程中全程都要用小火来炒,这样冰糖不会粘锅也不会有煳焦味,如感觉锅干就要加少量的水滋润。
大厨有个妙招是,在香料炒出香味后,加入米酒30克翻炒均匀,既能去除腥膻异味又能增加香味,大家一定要试试看哦!
