说起鸡蛋饼,最重要的就是饼和酱料的 *** ,饼要柔软酥脆,同时还得将锅里的饼煎炸至鼓起大泡,只有鼓起大泡蛋液才能灌进去,将鸡蛋煎熟才是一张合格的鸡蛋灌饼。煎好的鸡蛋饼,空口吃,总觉得味道太平淡,再刷上酱香浓郁的酱料,鲜香酥脆,下面蹦妈给大家分享鸡蛋灌饼的家常做法,掌握这个窍门。零失败,张张饼鼓大泡。

我们 *** 的饼,用半死面来 *** ,就是一半凉水一半开水来和面,半死面 *** 的饼内里蓬松多层,外皮酥脆。

材料

A死面:面粉300克、凉水150克;B烫面:面粉150克、开水60克(15张饼)

油酥:面粉、熟油

酱料:郫县豆瓣酱、耗油、芝麻酱

配菜:生菜、火腿肠、鸡蛋、葱花、盐

1.所有的A材料倒入盆里,一边加水一边搅拌,搅成面絮揉成面团,盖上保鲜膜静置。

2.所有的B材料倒入盆里,用刚烧开的水一边倒一边搅拌,面一定要烫熟。

3.烫好的面和死面揉到一起,比较沾手,适量油抹面团上,使劲把面团揉匀,让面团充分融合揉透揉光,面团搓成长条,然后揪成大小均匀的面剂子。盖上保鲜膜,醒面30分钟。

4.醒面的时间,我们来 *** 油酥,小碗里放入少许面粉,淋入热油,用筷子将面粉和油搅拌均匀,放凉后再使用,调好的油酥稀稀的状态。油酥还可以用猪油来做,味道比色拉油更香。

5.小碗里打入4个鸡蛋、放入切好的葱花,加少量油,用筷子打散备用。

7.醒好的面,拿起一个面剂子,按压扁,擀成饺皮大小后,抹上油酥,切记饼皮边不要抹油酥,不好封口,像包包子一样包起来,封口朝下擀开,封口一定要拧紧,以免漏气,影响起泡,继续按扁,擀成薄饼,轻轻的擀开,面皮不要擀破,会漏酥,漏酥的饼皮不易起泡。

8.用煎炸的做法,倒入稍微多点的油,下一步也很关键,油热后放入饼皮,开中大火,利用高温,让食物迅速的膨胀起来,高温烙制的饼外皮更酥脆,不要担心高温饼皮会焦,因为在锅里加了多量的油,所以饼皮不会焦和发干。慢慢的饼皮鼓起来了,感觉人生已到达巅峰。哈哈!

9.鼓起大泡,用筷子戳破皮,放入调好的蛋液,立马翻面,面饼中的蛋液完全凝固,饼皮颜色金黄,就可以出锅了,刷酱放生菜和火腿,松软酥脆喷香的鸡蛋灌饼就做好了。
