原料
鲤鱼一条、干辣椒、花椒、豆瓣酱、葱段、姜片、大蒜、葱花

1、首先把鱼从尾部把鱼鳞刮干净,再从鱼肚开刀,把内脏取出来,然后把鱼鳃去除,并用清水把鱼清洗干净备用。
?2、下面把鱼的腥线去除,首先在鱼头和鱼尾部各切一刀,在鱼头部能看到一个白色的圆点,那个就是鱼腥线,然后一个手捏着腥线,另一个手拿刀轻轻的拍打鱼身,慢慢的把鱼腥线取出来,另一面也用同样的 *** 取出鱼腥线。
3、然后把鱼介花刀,介花刀的时候不要太深,因为是鲜鱼直接烧制,鱼身容易烂,轻轻划一刀就可以,大蒜把根部去掉,然后用刀拍破放进盛器内。
4、下面开始上火 *** ,锅上火加入适量的植物油,再加入适量的猪油,猪油是给成菜提香的,再下入花椒、大蒜、姜片煸炒。
5、然后下入干辣椒、葱段、豆瓣酱继续煸炒,把以上小料炒香,记住以上小料一定要炒香,不然会影响成菜口感,然后加入适量的清水。
6、水开后把鲤鱼下入锅内,加入适量的东古酱油提鲜,加适量的料酒去腥,加入适量的陈醋、盐、胡椒粉、白糖调味,成菜口味稍微透出一点酸甜味,不易太重。
7、炖制鱼肉的过程中,要不断的往鱼身上淋汤汁,这样能加速鱼肉成熟,也可以盖上盖子,小火炖制12分钟左右,12分钟后鱼肉成熟,并把汤汁收粘稠,然后加适量的鸡粉、大葱花调味即可出锅。

今天小易和大家分享一道寓意特别好的糖醋鲤鱼,翘头翘尾的造型,寓意着鲤鱼跃龙门的喜悦,酸酸甜甜的口味也是很受欢迎。
所需食材:
鲤鱼1条、大葱、生姜、料酒、陈醋、白糖、生抽酱油、盐、清水、鸡蛋、食用油、番茄酱
*** 步骤:
之一步:鲤鱼去除鱼鳞和内脏,再用清水充分清洗干净;然后把清洗干净的鲤鱼打上花刀;在鱼身上先直刀切下去,再沿着里面的肉切上斜刀,鱼身上一共打上七刀即可;最后在鱼尾巴处划上十字;鱼的另一面也一样操作。
第二步:大葱、生姜切成片放入大碗中,再加入少许清水;然后加入少许食用盐和适量料酒,再下手捏出葱姜里面的汁水,做一个简单的葱姜水备用;接着把做好的葱姜水倒入装鲤鱼的大盆中,腌制20分钟。
第三步:调糖醋汁。碗中加入一大勺白糖,再加入比白糖稍微少一点的陈醋;接着再加入少许生抽酱油、盐、葱姜末调味;然后再加入一勺清水,并充分搅拌均匀备用。
第四步:调糊。大碗中按照1:1的比例加入适量面粉和玉米淀粉;接着打入一个鸡蛋,再少量多次地加入适量清水,并用筷子充分搅拌均匀,搅拌成没有疙瘩的面糊,厚度和酸奶差不多,把面糊拎起来流动成直线的状态即可。最后加入适量清油,用筷子再次搅拌均匀备用。
第五步:取出腌制好的鲤鱼,挑去里面的葱姜不要,再把鲤鱼身上拍上一层粉;接着把调好的糊糊倒入装鲤鱼的盆中;然后拎起鲤鱼的尾巴,把鱼身上的每一处都挂上糊糊,鱼肚子中也要把糊糊塞进去哦!
第六步:准备一口大一点的锅,加入足量食用油,再开大火把油温烧至七成热(210°左右);接着把挂糊糊的鲤鱼下入锅中,并用两个勺子把鱼头、鱼尾挤压住,使鲤鱼弯曲在油锅中。全程大火来炸,露在油外面的鱼身部分,用勺子舀取热油淋浇,使鲤鱼受热均匀;把鲤鱼炸至定型了,借助漏勺翻面,把鱼炸熟炸透(视频中全程炸了5分钟左右);最后用漏勺把炸好的鲤鱼捞出来。
第七步:把锅里面的油温继续烧至七成热,下入炸好的鲤鱼复炸1分钟左右,炸好后捞出来控干油备用。
第八步:把炸好的鲤鱼放入盘子里面,摆放好,翘头翘尾的造型酷似鱼跃龙门。
第九步:把锅烧热加入少许食用油,再加入少许番茄酱熬一下;接着下入调好的糖醋汁,大火熬开后加入少许水淀粉勾芡,把汤汁收浓稠;最后往里面加入一勺热油并搅拌均匀即可。
第十步:把熬好的汁水淋浇在鲤鱼上面,让鲤鱼身上的每一处角落都挂满酱汁;最后在盘子周围摆上一圈香菜点缀,美味即成。
*** 关键点:
1.调糊的时候请少量多次地加入清水,这样更好把握粘稠度;请顺逆时针交替搅拌,防止面糊上筋,影响酥脆的口感。
2.油炸鲤鱼的时候一定要高油温下锅,油温至少7成热。
